I made my own icing because cool whip usually melts.. This icing is pretty stable...

I split the amount of the icing in half.. and it's also pretty good without the almond extract (I didn't have any on me).. Still came out pretty good...
Later on the week... I am going to make carrot cake cupcakes if I feel up to it... Until next time...
