Day off finally...

I've been wanting to make these for a very long time... Pink Champagne Cupcakes... Except I didn't have any champagne so I used my favorite moscato... I think it works being that it's a sweet wine and all... I might substitute with ginger ale for all those who aren't legal yet... I call these Pink Moscato Cupcakes... here are some pictures...

Sleep schedule messed up!!!

My sleep schedule is so messed up... On Monday I worked 3-11, then I had to go to class early in the morning the next day.. Have that times 2 (4 days of alternating cycles of sleep).. And of course I have to wake up early tomorrow too.. FML!!!.. So hopefully my sleep schedule gets back on track tomorrow... I've been such an irritable person... Sooo I turn to my stress reliever... lol.. This time I made carrot cupcakes.. I call these Hawaiian Carrot Cupcakes because instead of using walnuts, I used macadamia nuts...







Not really a big carrot cake fan... but made them anyway... I went a little crazy with the icing... lol...

Lazy Sunday... Nevermind it's Monday now... womp womp...

I sometimes don't like Sundays because it usually means that there is work the next day... womp womp... Anyway, I make banana pudding cupcakes... I thought they turned out pretty good... I like these better than the strawberry ones I made yesterday... I also made my own icing which taste pretty good too... It's not too sweet...


The icing I made...


I made my own icing because cool whip usually melts.. This icing is pretty stable... 



I split the amount of the icing in half.. and it's also pretty good without the almond extract (I didn't have any on me).. Still came out pretty good...


Later on the week... I am going to make carrot cake cupcakes if I feel up to it... Until next time...

Weekend off!!!

I baked some strawberry and cream cupcakes today... Here's the picture...



I used cool whip as my topping... I baked mine for 16-17 minutes...



Maybe if I am up to it, I will make those banana crunch muffins... that is if I am up to it... until next time...

Hurry up Friday! Get here already!

Hey all, so I figured I would post up a couple of recipes.. Chocolate Ganache Cupcakes and Nutella Black and White Cookies...

First let's start of with the Nutella Black and White cookies...

I baked mine for a full 12 minutes because when I tried just 10 minutes, they came out too cakey.. Depends how strong your oven is I guess...

And Chocolate Ganache Cupcakes...




I halfed the recipe for the ganache frosting because you don't even use the whole thing for the amount of cupcakes the batter makes... and it is VERY important to have your butter at room temperature when making these.. If not the cupcakes turn out really flat (they don't rise up too much to begin with)..

OMG it's only Tuesday?!

Hey guys I thought I would post something since it's late and I can't sleep... Came home from a stressful day at work... and when I'm stressed out I bake something... surprise surprise... lol... I figured I would bake the cookies I have been meaning to bake which are these chocolate chip cookies from Levain Bakery in NYC... I'm so glad I don't live in the city or else I would be fat.. It's kind of funny because I would cook something, eat only a little bit of it, and won't eat it anymore... It's just a stress reliever for me to cook.. anyway here's a picture of the cookies I made...



I did half a batch with macadamia nuts and half a batch with walnuts...

TGIF!!!

I am so glad that the work week is over, and the weekend was finally here... This week was so stressful, I'm so glad that my brain can finally rest... Anyway thought I would make banana pudding after work using the Magnolia Bakery's (in NY) recipe...



Hope it tastes good... I have to leave it in the fridge for 8 hours (overnight)...
